Roasted sweet potato

I love sweet potatoes and I will try every recipe that features this inexpensive vegetable that is so good for you. I didn’t have any fettuccine so I used linguini (my favourite pasta).

Serves 4

2 small sweet potatoes, peeled and chopped into small pieces

1 garlic head, separated. Peel some of the hard skin off. Leaving a thin skin covering

2 chicken breasts

salt and pepper to taste

2-3 tbsp. olive oil

1 cup of flat leaf parsley (don’t use the curly parsley)

Balsamic vinegar to serve

Pre-heat the oven to 350 C. In a medium sized bowl place the sweet potato, garlic, olive oil, salt and pepper to taste. Toss to coat. Then pour into a shallow baking dish. Cook until the sweet potato and chicken are done.

Set aside and let it cool. In the meantime cook the paste until desired.

Peel the garlic and mash it with the back of a fork. Shred the chicken into pieces. Place some pasta in the bowl and then add some chicken and garlic. Add the parsley. Drizzle the balsamic vinegar over it. Enjoy!
